Sambal hijau (literally green sambal) is a traditional variety of sambal that comes from Padang, the capital of the provence of West Sumatra. While sambal is normally made with red chillies and red tomatoes, sambal hijau is made with green chillies and green tomatoes, giving it its distinct green colour.
